Cauliflower

The Basics

Cauliflower is a cruciferous vegetable that belongs to the same family as cabbage, broccoli, and brussel sprouts. While the most common variety has white flower buds, the buds can also be purple, orange, or green. (Read more on Wikipedia.)

Preparation

Remove the outer leaves and cut off the large stalk. Cut the florets from the core, leaving a small stem on each cluster. If florets are larger than desired, cut into smaller, uniform pieces. Cauliflower can then be steamed, boiled, or microwaved.

Storage Tips

Cauliflower keeps best in a plastic bag stored in the refrigerator crisper.

Nutrition

Cauliflower is yet another nutrient dense food, containing high amounts of vitamins and minerals and a low amount of calories. It is particularly high in fiber, folate, and vitamin C, and also contains many phytonutrients linked to cancer prevention. (Read more on World's Healthiest Foods.)
