The Basics

Garlic scapes are the flowering stems of the garlic plant. Farmers usually cut these off to allow the bulbs to grow larger, but the scapes themselves are tender and edible, with a taste milder than that of the cloves. (Read more on Wikipedia.)

Preparation

Garlic scapes can be used raws, sauteed, or grilled. To cook them, simply cut them into unifrom pieces (much like asparagus) and either grill or sautee in oil. Try adding them to pastas, stir-fries, or omelettes. They also make a great base for pesto sauces.

Storage Tips

Store garlic scapes in the refrigerator for up to a month.
