Green Beans

The Basics

Green beans go by many names, including string beans, french beans, snap beans, and runner beans. As opposed to other beans that are usually dried, green beans are eaten fresh, with their pod and all!

Preparation

Snap off the ends of each green bean and rinse thoroughly under cold water. From there, you can either cut the beans into smaller pieces or leave them whole and cook them by steaming, boiling, microwaving, sauteeing, or stir-frying.

Storage Tips

Place green beans in a perforated plastic bag or paper bag and store them in the refrigerator crisper.

Nutrition

At only 34 calories per cup, green beans are very high in vitamins A, C, and K, as well as folate, manganese, and fiber.
