Onions

Onions are one of the most widely used vegetables for cooking all over the world. They are normally available in red, yellow, and white, with each variety varying in pungency and sweetness. Before bulbing occurs, onions can be harvested and used as scallions. (Read more on Wikipedia.)

Onions are a great source of vitamin C, manganese, and vitamin B6. They also contain flavonoids, which are chemicals that can inhibit inflammataion and tumor growth, as well as aid immunity. Store onions in a cool, dry, well ventilated place. If the onions show signs of sprouting, cut away the sprouts and use them immediately. Avoid storing onions and potatoes together, as the gases they each give off will cause the other to spoil.
