Peppers, Green Bell

Bell peppers (or "capsicum" in British English) are technically fruits that originated in Mexico, Central America, and northern South America.The color can be green, red, yellow, or orange depending on when the peppers are harvested. Green peppers are generally less sweet and slightly more bitter than the other colors since they are harvested earlier.

Green bell peppers are a great source of vitamin A, vitamin C, vitamin K, vitamin B6, potassium, and manganese. Just one 1/2 cup of chopped green peppers will give you 100% of the daily recommended value of vitamin C!

Bell peppers are ethylene sensitive, so they should not be stored near ethylene-producing food such as pears or apples. Store peppers in plastic bags and they will keep up to five days in the refrigerator.

Green peppers will keep slightly longer than the other, more ripe, varieties.

Local bell peppers are generally available between late July and mid-October, but California-grown organic bell peppers are available nearly year-round.
