Parsnips

The Basics

Parsnips are a root vegetable that originated in Eurasia. They closely resemble carrots but are paler in color and have a slightly sweeter flavor. Parsnips were actually used to sweeten jams and cakes in Europe before sugar became widely available. (Read more on Fruits & Veggies More Matters)

Storage Tips

Store root veggies in a plastic bag in the crisper drawer of the refrigerator.

Nutrition

One 1/2 cup serving of cooked parsnips provides only 55 calories and is a great source of vitamin C, fiber, folate, and manganese. (See more parsnip nutrition facts on Self.com.)
